Ingredients for making Urad Dal Kachori –
-1 cup urad dal
-2 cups wheat flour
-1 tsp garam masala
-Spiced asafetida (grinded)
-1 tsp fennel seeds
-1 teaspoon roasted cumin powder
-1 tsp ginger-garlic paste
-1 finely chopped green chillies
-1 tsp red chilli powder
-1 teaspoon finely chopped coriander
Salt according to taste
– For frying the oil.

Method of preparation of Urad Dal Kachori-
To make urad dal kachori, first of all wash the urad dal thoroughly and soak it in water for 6 to 7 hours, then remove the water and grind it in a grinder. Now filter the flour in a vessel, add one spoon of oil and half a teaspoon of salt and mash it with both hands, in this way the oil and salt will mix well in the flour. Now put oil in the flour and filter it. Heat the oil in a pan on medium heat.

Once the oil is hot, add green chilli and ginger-garlic paste and fry it well for 20 seconds. Now add asafetida and lentils and stir fry until the lentils turn brown. After that add coriander powder, cumin powder, red chili powder and salt to the lentils and fry them for 5 to 6 minutes and turn off the heat. When the dal mixture cools down, then knead it by mixing it with wheat flour.

When kneading the dough, add chopped coriander and fennel to it. After this, make small dough balls from the flour and roll them like a poori. Likewise prepare all the kachoris.

Now heat the oil once in high heat, then heat the oil in a pan on medium heat. As soon as the oil is heated, fry all the kachoris one by one till they turn golden in color. Take your urad dal kachori is ready, you can serve it hot with coriander-mint chutney, curd or boondi raita.
