Light low-carb zucchini mince balls with salad
Meatballs are eagerly eaten in all parts of the world. However, the hearty little meatballs are usually rich in calories – not so our zucchini meatballs! But this light low-carb version is also outrageously delicious.
And this is how it’s done
- Leek onion wash, clean and in fine rings cut. Wash, clean and finely dice the zucchini. Peel the garlic clove and also dice finely. Drain corn from the tin well. Sort and wash the salad leaves.
- Mix the spring onion rings, courgette cubes and garlic with the minced beef, breadcrumbs, corn, chopped parsley, egg yolk, salt and pepper well and form small balls. Heat a coated pan and fry the balls in oil until golden brown all around.
- Mix the salad leaves with vinegar and oil, arrange on a plate with the meatballs.
