Would you like to enjoy a hearty and hearty breakfast? Then you should definitely try this recipe for a Hessian Stulle with bung cheese, herbs and black olives!

Ingredients for 4 persons:

  • For the bunghole cheese:
  • 1/2 shallot
  • 150 g cream cheese
  • 75 g cream quark
  • 50 g soft butter
  • 1 tablespoon of sweet paprika powder
  • Salt
  • For the sandwiches:
  • 200 g hand cheese
  • 1 shallot
  • 2 tablespoons cider vinegar
  • 2 tablespoons rapeseed oil
  • Salt
  • Pepper, from the mill
  • 2 stems dill
  • 2 stalks of parsley
  • 100 g black olives, with garlic in the middle
  • 4 slices of rye sourdough bread

Per serving about:

  • 455 kcal
  • 35 g fat
  • 12 g carbohydrates
  • 23 g protein

Preparation time:

  • 50 minutes (plus 20 minutes baking time and 3 hours cooling time)

Here’s how it’s done:


  1. Peel and finely dice the shallot. Mix together with cream cheese, curd and butter in a bowl. Stir in paprika powder and salt and put aside.
  2. Cut the hand cheese into small cubes. Peel and finely dice the shallot. Mix both together with apple vinegar, oil, salt and pepper in a bowl. Wash the herbs, pluck off the tips and leaves, chop finely and add. Quarter the olives lengthwise.
  3. Spread the bung cheese on the slices of bread and top with the marinated hand cheese. Spread the olives on top and serve the bread.
