Mom's Lemon Pie
- 1 1/2 cups sugar
- 7 Tablespoon of cornstarch or 5 Tablespoon cornstarch to 3 Tablespoon flour
- 1/4 Tsp. salt
- 1 1/2 Cups water
- 3 Beaten egg yolks
- 1 Teaspoon of grated lemon peel
- 2 Tablespoon butter
- 1/2 cup lemon juice
- 1 Tablespoon Cornstarch
- 6 Tablespoon sugar
- 1/8 Teaspoon salt
- 1/2 Cup water Mix sugar and cornstarch and salt and water. cook until clear. Cool add three egg whites beaten stiffly. Combine mixture thoroughly and top pie bake ate 350’ F. for 12 to 15 minutes
- Combine sugar cornstarch, salt in saucepan. Stir in water. Bring to boil over medium heat and cook, stirring constantly, till thick, about 3 to 5 minutes.
- Remove from heat. Stir in small amount of hot mixture into egg yolks, the return to remaining mixture in pan. Bring to boil and cook 1 minute stirring constantly, remove from heat add lemon peel and butter. Slowly stir in lemon juice. cool to lukewarm. Pour mixture into pie shell.
- Mom adds more lemon juice so you should also add more cornstarch to thicken or use less water.
