Sounds like a leftover meal, but it’s outrageously delicious: Our vegan potato and bean salad! You simply have to try it, we promise it’s worth it.
Here’s how it’s done:
- Wash the potatoes, boil them and let them cool down. In the meantime, rinse beans and drain well. Peel onion and chop finely.
- Peel and slice the potatoes and mix with beans and onions. Whisk vinegar with 1 tbsp. water, lemon juice, caraway, salt and pepper. Embezzle oil. Let the salad with the dressing steep for about 15 minutes. Garnish with basil.
