Combine flour, sugar and salt in a large bowl. Cut butter until mixture resembles coarse meal. Stir in yolk and enough water so dough just comes together.
Step 2
Divide in half. Gather each piece into a ball. Flatten to disc. Wrap each in plastic. Refrigerate 1 hour. Preheat oven to 425’ F.
Step 3
Roll dough out onto a lightly dusted floured surface to a thickness of 1/4” inch. Fit into pie plate. Bake 12-15 minutes.
