Ingredients

  • 3/4 Cup butter
  • 2 Cups sugar
  • 4 Eggs
  • 3 Cups flour
  • 1/2 Teaspoon allspice
  • 1/2 Teaspoon cinnamon
  • 1/2 Teaspoon Nutmeg
  • 1 Teaspoon soda
  • 1 Cup buttermilk
  • 2/3 Cup cherry preserves
  • 2/3 Cup apricot preserves
  • 2/3 Cup pineapple preserves
  • 1 Cup chopped pecans
  • 1 Teaspoon vanilla

Instructions

Step 1

  • Cream butter and sugar, add eggs. Sift flour and spices together. Dissolve soda in buttermilk. Add dry ingredients to creamed mixture alternating with buttermilk.

Step 2

  • Fold in preserves, pecan, and vanilla. 

Step 3

  • Place in cake pan. Bake at 325’F. for 1 hour and 15 minute to 1 hour-30 minutes. Serve with whipped cream or topping. Makes 20 servings. Can also be baked in two loaf pans.
