Ingredients
1 1/2 Cups sugar
1/8 Teaspoon of salt
4 Teaspoon cornstarch
2 Teaspoon finely grated lemon zest
4 eggs at room temperature
1/3 Cup fresh lemon juice
5 Tablespoon unsalted butter cooled
1 Partially baked 9” pie shell
Instructions
Step 1
Preheat oven to 325’ F. Combine sugar and cornstarch in a large bowl and mix making sure to press out lumps.
Step 2
Stir in lemon peel. beat in eggs one at a time. Stir in lemon juice. Blend in butter. Pour filling into pie shell.
Step 3
Bake until filling is puffed and browned 50 to 60 minutes. Cool to room temperature before serving.
