Lemon Chess Pie

Ingredients

  • 1 1/2 Cups sugar
  • 1/8 Teaspoon of salt
  • 4 Teaspoon cornstarch
  • 2 Teaspoon finely grated lemon zest
  • 4 eggs at room temperature
  • 1/3 Cup fresh lemon juice
  • 5 Tablespoon unsalted butter cooled
  • 1 Partially baked 9” pie shell

Instructions

Step 1

  • Preheat oven to 325’ F. Combine sugar and cornstarch in a large bowl and mix making sure to press out lumps. 

Step 2

  •  Stir in lemon peel. beat in eggs one at a time. Stir in lemon juice. Blend in butter. Pour filling into pie shell. 

Step 3

  •  Bake until filling is puffed and browned 50 to 60 minutes. Cool to room temperature before serving.
