Pre-heat oven to 350’ F. Cream butter in a large bowl using an electric mixer. Gradually add sugar and beat well. Beat in eggs one at a time. Combine orange juice and water and blend into butter mixture
Step 2
Beat in flour and cornmeal. Fold in coconut. Divide mixture evenly into both pie shells.
Step 3
Bake until golden, about 50 to 60 minutes. Let cool before serving. Makes two 9” pies.
