Mom's Lemon Chess Pie

Ingredients

  • 4 Eggs
  • 2 Cups sugar
  • 1/2 Cup lemon juice
  • 1 Tablespoon lemon zest
  • 1/2 Cup melted butter
  • 1 Teaspoon cornmeal
  • 1 Teaspoon flour
  • 1/8 Teaspoon salt
  • 1 9 inch unbaked pie shell Tip:  This is the chess pie Mom makes most often!

Instructions

Step 1

  • Beat eggs thoroughly.  Gradually beat in sugar.  Add remaining ingredients, beat well.

Step 2

  • Pour into pie shell.  Bake at 350 degrees for 40 minutes or until brown.

Step 3

  •  Do not over bake.  Makes 6 servings.
