Aunt Mabel's Fruit Cake

Ingredients

  • 1 1/2 Cups large seeded Raisins (cut small)
  • 1 1/2 cups dates (cut small)
  • 2 Cups sugar
  • 2 Cups boiling water
  • 5 Tablespoons shortening
  • 3 Cups gold medal flour
  • 1 Teaspoon soda
  • 2 Teaspoons cinnamon
  • 1 Teaspoon cloves
  • 1 Teaspoon salt

Instructions

Step 1

  • Place raisins, dates, sugar, water and shortening in saucepan and simmer 20 minutes.  Cool.  Sift flour, soda, cinnamon, cloves, and salt together.  Stir into cooled mixture adding nuts last.

Step 2

  •  Pour into greased tube pan.  Bake 1 1/2 hours in 325 oven.  To give a holiday touch add 1 cup mixed candied fruit, add with nuts.  Save some flour to put in fruit to keep from sticking together.

Step 3

  • Remove cake from pan and glaze with heated white Karo syrup-brushed on.  Decorate with candied fruit.
