Manhattan Clam Chowder

Ingredients

  • 3 Slices bacon
  • Thyme 1/4 to 1/2 Teaspoon
  • 1 Diced med. onion
  • 3 Cups cubed raw potatoes
  • 1/2 Cup diced celery
  • 1 1/2 Cups diced carrots
  • 5 Cups hot water
  • 1 1/2 Teaspoon salt
  • 1/8 Teaspoon pepper
  • 1 lb. Can tomatoes
  • 1 Small can tomato juice
  • 3 Cups  clam liquid-juice
  • 2 Doz. clams or 3 cans

Instructions

  • Sauté diced bacon, add thyme and onions. Add potatoes, celery, water, salt, pepper & carrots. Simmer 5 minutes. Add tomatoes, clam liquid( add water to make an even 3 cups) Simmer.  1 hour before serving, add clams and parsley.  Add 2 Tablespoon flour to water to thicken, if necessary.
