Cranberry and Pistachio Salad
Ingredients
- 1 head romaine lettuce, torn into bite-size pieces
- 1 green bell pepper (capsicum), seeded and diced
- 1 red bell pepper (capsicum), seeded and diced
- 1/2 cup (125 ml) dried cranberries
- 1/2 cup (125 ml) shelled pistachios
- 1/4 cup (60 ml) extra-virgin olive oil
- 3 Tbs (45 ml) red wine vinegar
- 1 tsp (5 ml) Dijon-style mustardSalt and freshly ground pepper to taste
Instructions
- Combine the romaine, peppers, cranberries, and pistachios in a large bowl. Whisk together the remaining ingredients and toss with the lettuce mixture. Serves 6 to 8.
