German Fruitcake
Ingredients
- 3/4 Cup butter
- 2 Cups sugar
- 4 Eggs
- 3 Cups flour
- 1/2 Teaspoon allspice
- 1/2 Teaspoon cinnamon
- 1/2 Teaspoon Nutmeg
- 1 Teaspoon soda
- 1 Cup buttermilk
- 2/3 Cup cherry preserves
- 2/3 Cup apricot preserves
- 2/3 Cup pineapple preserves
- 1 Cup chopped pecans
- 1 Teaspoon vanilla
Instructions
Step 1
- Cream butter and sugar, add eggs. Sift flour and spices together. Dissolve soda in buttermilk. Add dry ingredients to creamed mixture alternating with buttermilk.
Step 2
- Fold in preserves, pecan, and vanilla.Â
Step 3
- Place in cake pan. Bake at 325’F. for 1 hour and 15 minute to 1 hour-30 minutes. Serve with whipped cream or topping. Makes 20 servings. Can also be baked in two loaf pans.
