Lemon Chess Pie
Ingredients
- 1 1/2 Cups sugar
- 1/8 Teaspoon of salt
- 4 Teaspoon cornstarch
- 2 Teaspoon finely grated lemon zest
- 4 eggs at room temperature
- 1/3 Cup fresh lemon juice
- 5 Tablespoon unsalted butter cooled
- 1 Partially baked 9” pie shell
Instructions
Step 1
- Preheat oven to 325’ F. Combine sugar and cornstarch in a large bowl and mix making sure to press out lumps.
Step 2
- Stir in lemon peel. beat in eggs one at a time. Stir in lemon juice. Blend in butter. Pour filling into pie shell.
Step 3
- Bake until filling is puffed and browned 50 to 60 minutes. Cool to room temperature before serving.
