Cream of Asparagus Soup
Ingredients
Cream of Asparagus Soup
- 1 Lb. Fresh green asparagus
- Water
- 6 Cups veal or poultry stock
- 1/4 Cup chopped onion
- 1/2 Cup chopped celery
- 3 Tablespoon butter
- 3 Tablespoon flour
- 1/2 Cup cream
- salt, paprika, white pepper
- 1 Hardboiled egg, chopped
Instructions
How To make Cream of Asparagus Soup
- Wash and remove tips from asparagus. Simmer tips in water, covered until tender. Cut asparagus stocks into pieces and place in large saucepan. Add stock, and onion and celery. Simmer covered about 1/2 hour. Strain through sieve or blender. Melt butter in saucepan. Stir in flour until blended. Stir in cream slowly. Add blended celery, onion and asparagus and stock. Heat-adding the asparagus tips. Season immediately before serving with salt, paprika and white pepper.
