Waldorf Salad has been served on special occasions in my parents’ home for as long as I can remember. The original was created in 1893 by Oscar Tschirky at the Waldorf-Astoria Hotel in New York City. His creation consisted only of apples, celery, and mayonnaise. The nuts were added later and have since become considered a standard ingredient.
What is Waldorf Salad?
According to Wikipedia, a Waldorf salad is a fruit and nut salad generally made of celery, fresh apples, walnuts, and grapes, dressed in mayonnaise, and traditionally served on a bed of lettuce as an appetizer or a light meal. The apples, celery, and grapes can all be green, which harmonizes the color palette of the dish.

Ingredients
- 1 cup (250 ml) diced red-skinned apples
- 1 cup (250 ml) diced celery
- 1/2 cup (125 ml) walnut or pecan meats
- 3/4 cup (180 ml) mayonnaise
Instructions
- Combine all ingredients and serve chilled. Serves 4 to 6.

Ingredients
- 2Â whole Boneless, Skinless Chicken Breasts
- 1Â stalk Celery, Thinly Sliced
- 3/4 c. (or More) Roughly Chopped, Soaked And Dehydrated Pecans (or Toasted Pecans)
- 3/4 c. Halved Grapes
- 1/4 c. Sour Cream
- 1/4Â Lemon, Juiced
- 3/4 c. Mayonnaise
- Salt And Pepper, to taste
Instructions
- Preheat oven to 425ºF. Place chicken on a baking sheet and season generously with salt and pepper. Bake in preheated oven for about 23–25 minutes, or until it reaches an internal temperature of 165ºF. Allow to cool completely and slice into bite-sized pieces. Place chicken, celery, apple, grapes, pecans, mayonnaise, and sour cream in a large bowl. Mix until well combined. Taste and add salt, pepper, and lemon juice if needed. Serve immediately. Store any leftovers in the refrigerator.
