German Celery Root and Apple Salad
Ingredients
- 1 large celery root (celeriac), (about 1 1/2 lbs, 675 g),peeled and cut into thin slices
- 1 large tart apple, peeled, cored, and cut into thin slices
- 1/4 cup (60 ml) mayonnaise
- 1/4 cup (60 ml) sour cream
- 1 Tbs (15 ml) finely chopped fresh dill
- 1 Tbs (15 ml) finely chopped fresh parsley
- 1 Tbs (15 ml) lemon juice
Instructions
- Salt and freshly ground pepper to taste. Boil or steam the celery root until tender, about 20 minutes. Drain and pat dry with paper towels. Combine with the sliced apple in a large mixing bowl. Whisk together the remaining ingredients and pour over the celery root and apple. Toss gently to combine. Serve chilled or at room temperature. Serves 4 to 6.
