How about a hearty recipe for braised cucumbers with bacon and dill? The dish is not only incredibly tasty, but does not contain many calories or carbohydrates.
And this is how it’s done
- Wash and peel the cucumbers, cut them in half lengthwise and scrape out the seeds with a spoon. Cut the flesh into approx. 1 cm thick slices.
- Cut the bacon into small cubes. Peel and finely chop the onion and fry it together with the bacon in hot oil until colourless. Add the gherkins and deglaze with the stock. Season with salt and pepper and braise for 5-8 minutes. If necessary add some more stock.
- Finally, stir the sour cream and dill into the braised cucumbers, but do not bring to the boil. Season to taste with a pinch of sugar and a dash of lemon juice. Arrange the cucumbers on plates, grind pepper over them and serve garnished with dill.
