  • 1 bay leaf
  • 1 sprig of thyme
  • Salt
  • Pepper
  • 300 g frozen peas
  • 50 g diced poultry ham

Here’s how it’s done:

  1. Cut the broccoli into small florets. Cut onions into fine cubes. Heat 2 tablespoons of oil in a pot and sauté the onions until translucent. Add broccoli and fry. Deglaze with broth. Add bay leaf and thyme. Season with salt and pepper. Simmer for about 15 minutes. Add peas after about 10 minutes cooking time.
  2. Meanwhile, fry the diced ham in ½ tablespoons of hot oil in a pan until crispy. Take out and drain on kitchen paper.
  3. Remove laurel and thyme branch from the soup. Remove approx. 4 tablespoons of peas from the soup. Add butter and coconut milk to the soup and puree finely with a blender or blender. Season to taste with salt, pepper and nutmeg.
  4. Arrange the soup in bowls and spread diced ham on top. Spread the peas on top and serve garnished with cress.

This Pea soup with broccoli and ham has it in itself – in the truest sense of the word! The high vitamin B content of peas helps with stress and fatigue, while broccoli is a top supplier of vitamin A, which supports vision. Coconut milk activates the metabolism, while the medium-chain fatty acids it contains provide quick energy and get the metabolism going. A real protein star, however, is cress. With over 4% protein, the herb makes many a vegetable look old.
