Cold Zucchini Soup
Ingredients
- 3 1/2 Lb. zucchini, sliced
- 1 Cup chicken broth
- 1/4 Cup butter
- 1 Tbsp. flour
- 1 Cup milk
- 1 Teaspoon salt
- 1/4 Teaspoon white pepper
- 1/2 Teaspoon dried marjoram
- 1/4 Teaspoon dried tarragon
Instructions
- Combine Zucchini and chicken broth in Dutch oven: bring to a boil. Cover and reduce heat and simmer 15 minutes or until tender. Spoon mixture in container of electric blender, process until smooth. Melt butter in Dutch oven over low heat; add flour and stir until smooth. Cook 1 minute stirring constantly add milk; cook 1 minute; stirring constantly: gradually add zucchini mixture, salt and remaining ingredients. Cook over medium heat until thoroughly heated. Chill.Yield is 2 quarts.Â
