Manhattan Clam Chowder
Ingredients
- 3 Slices bacon
- Thyme 1/4 to 1/2 Teaspoon
- 1 Diced med. onion
- 3 Cups cubed raw potatoes
- 1/2 Cup diced celery
- 1 1/2 Cups diced carrots
- 5 Cups hot water
- 1 1/2 Teaspoon salt
- 1/8 Teaspoon pepper
- 1 lb. Can tomatoes
- 1 Small can tomato juice
- 3 Cups clam liquid-juice
- 2 Doz. clams or 3 cans
Instructions
- Sauté diced bacon, add thyme and onions. Add potatoes, celery, water, salt, pepper & carrots. Simmer 5 minutes. Add tomatoes, clam liquid( add water to make an even 3 cups) Simmer. 1 hour before serving, add clams and parsley. Add 2 Tablespoon flour to water to thicken, if necessary.
